Shrimp Toast


Day Old Bread
1 pound Raw Shrimp, cleaned
1/3 cup Water Chestnuts
3 tablespoons Rice Wine
Salt and White Pepper to taste
1 tablespoon Cornstarch
1 Egg White
Ginger to taste


Remove the crust from the bread.  Cut into triangles, and leave on counter to dry out.  Process the shrimp and water chestnuts to a coarse grind.  Add the rest of the ingredients and blend to a paste.  Spread the past on one side of the bread pieces.  Deep fry in 325 degree oil, shrimp side down, until golden brown  Turn once and finish frying.  Drain on paper towels.  Serve with your favorite sweet and sour sauce.
