Onion Casserole

1 pound Vidalia Onions, sliced
1 Egg, beaten
1 cup Heavy Cream
1/4 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup Sharp Cheddar Cheese
Paprika for garnish
Parsley for garnish

Preheat oven to 350 degrees.  In a medium saucepan, combine the onions and enough water to cover.  Bring to a boil for one minute.  Drain and place the onions in an 8-inch square baking dish.  In a bowl, combine the egg, cream, salt and pepper.  Pour the mixture over the onions.  Sprinkle the shredded cheese on top, and sprinkle with paprika.  Bake for 25 minutes.
