1 Egg per mini omelette
Vegetables of your choice
Meat of your choice (optional)
Salt and Pepper to taste
Spray muffin tins with non-stick spray.
Beat eggs (one per omelette), seasoning to taste.
Place veggies and meat in bottom of muffin tins, or stir them into egg mixture.
Pour egg over veggies and meat.
Bake at 350 degrees for 20 minutes.
