Shrimp with Ground Pork

INGREDIENTS
2 ounces ground pork
3/4 pounds large shrimp
1 clove garlic, minced
1 1/2 cups chicken stock
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon white pepper
1 teaspoon cornstarch
3 teaspoons water
1 egg, slightly beaten
2 tablespoons chopped green onion
1 tablespoon of oil

METHOD
Add the oil to a hot wok and stir fry the garlic (do not burn).  Brown the pork in the oil, crumbling as it cooks. Shell and de-vein the shrimp, and split down the back with a sharp knife.  Add the shrimp to the pork.  Add 1/4 cup of the stock and steam until the shrimp are opaque.  Add the remaining stock, seasonings and the cornstarch dissolved in the water. Heat through and remove from burner.  Add egg slowly as you stir it into the shrimp mixture.  Add the green onions, and serve over rice.
