1 small to medium Pumpkin
4 ounces Mushrooms, sliced
1 Onion, chopped
1 can Cream of Chicken Soup
2 tablespoons Oil
1 1/2 to 2 pounds Ground Beef
8 ounces Waterchesnuts, drained
1 1/2 cups Rice, cooked
2 tablespoons Soy Sauce
2 tablespoons Brown Sugar
Cut off the top of the pumpkin.
Clean out the seeds and pulp.
Saute’ the onion in the oil until tender.
Add the meat and brown.
Drain and add the soy sauce, brown sugar, mushrooms and soup.
Simmer 10 minutes stirring occasionally.
Add the rice and sliced waterchesnuts.
Spoon the mixture into the pumpkin shell.
Replace the top and place on a baking sheet.
Bake for one hour at 350 degrees or until the pumpkin is done.
